  • 1 cup short-grain rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1 pinch salt
  • 1 teaspoon pure vanilla extract optional

Instructions
 

  • Rinse the rice under cold water to remove excess starch.
  • In a medium saucepan, combine the rice and milk. Bring it to a gentle simmer over medium heat, stirring occasionally.
  • Once it starts simmering, reduce the heat to low. Continue cooking, stirring frequently to prevent the rice from sticking to the bottom.
  • Cook for 18-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
  • Stir in the sugar and salt, mixing well. Allow it to cook for another 5 minutes to thicken.
  • Add vanilla extract if desired and stir to incorporate.
  • Remove from heat and let the pudding cool slightly. If you prefer a thicker texture, let it cool to room temperature.
  • Serve the rice pudding warm, or chill it in the refrigerator for a cold treat.
  • Optionally, garnish with cinnamon, fruit, or nuts for extra flavor.
