  • 1 pound Flanken cut beef
  • 2 medium carrots
  • 2 stalks celery
  • 1 large onion
  • 2 cloves garlic
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions
 

  • Trim the Flanken cut beef to remove excess fat.
  • Cut the beef into small, bite-sized chunks.
  • Chop the carrots, celery, and onion into similar-sized pieces.
  • Chop the garlic finely.
  • In a large stockpot, brown the beef over medium-high heat.
  • Remove the browned beef and set it aside.
  • In the same pot, sauté the chopped vegetables and garlic until softened, adding oil if needed.
  • Return the beef to the pot with the vegetables.
  • Add the bay leaves, thyme, salt, and pepper.
  • Pour in enough broth to cover the ingredients (about 4-6 cups of beef or vegetable broth).
  • Bring the mixture to a boil.
  • Reduce the heat and allow it to simmer for at least an hour, stirring occasionally.
  • Taste the broth and adjust seasoning if needed.
  • Once the meat is tender and the flavors have melded, serve hot.
