Trim excess fat from the skirt steak for even cooking.
Prepare a marinade by mixing olive oil, garlic, and herbs like thyme and rosemary (optional).
Add red wine or beef broth to the marinade (optional).
Season the steak with salt, pepper, and paprika.
Place the skirt steak into the slow cooker.
Add the marinade and olive oil on top of the steak.
Cook on low for 8-10 hours or on high for 4-6 hours.
Optionally, add diced onions, bell peppers, and minced garlic halfway through the cooking time.
