Ingredients
  

  • 1 lb chicken tenderloins or chicken breasts/thighs
  • 2-3 medium potatoes peeled and cubed
  • 4-5 medium carrots peeled and sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 teaspoon paprika garlic powder, or onion powder
  • Optional: olive oil for greasing the crock pot
  • Optional: chicken broth for added moisture

Instructions
 

  • Peel and cube the potatoes into 1-inch cubes.
  • Peel and slice the carrots into 1/2-inch slices.
  • Chop the onion into 1-inch pieces.
  • Mince the garlic.
  • Season the chicken and vegetables with salt, pepper, garlic powder, paprika, and thyme.
  • Optionally, drizzle with olive oil to prevent sticking.
  • Place the chicken at the bottom of the crock pot.
  • Layer the potatoes, carrots, onions, and garlic on top of the chicken.
  • Set the crock pot to low and cook for 6-8 hours or until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
  • Alternatively, set the crock pot to high and cook for 3-4 hours.
  • Once cooked, serve immediately.
